New Chocolate up on the website


A whole host of never seen before holiday chocolate are up on the website for your enjoyment. My favorite is the Orange Slices.




It's a beautiful orange ganache which i pipe into a white chocolate shell molded to look like an orange slice. I use annatto seed to color this beautiful orange orange and it's all natural and organic. So, enjoy this orange. I used orange juice, fresh squeezed and orange zest in this confection. You'll love it.

Don't forget the very popular pumpkin pie caramel.



Also the ever popular peppermint cordial.

Lemon Logs, a new zesty delight


You will love our new Lemon Log. It's a wonderful treat.

Our Lemon Log is a zesty combination of lemon, fondant and white chocolate ganache enrobed in organic and fair trade 73% dark chocolate and then decorated with sanding sugar. Not too sweet and not too sour, this chocolate delight will thrill you and will leave you wanting more. This is a new favorite.

New Chocolates at LBC for Halloween: The Making of...


Look at these freshly enrobed and decorated Mocha Marshmallow.


I plan to get these up on the blog in the next few weeks. This is our take on Hot Chocolate, that's the round one with white chocolate curls on top and the stripped beauty is Mocha Marshmallow. Both are very yummy. Coming soon to the website. I'll tweet about it when they are up. We have Maple Creams, Hot Chocolates, Mocha Marshmallow, Pumpkin Pie Caramels and the Peppermint Creams. Yummy each and every one. In the meantime, check out the website for our wonderful chocolates.

Vegan Truffles have been made


I made 2 truffles and one melt-away, all vegan. I made a peanut butter melt-away with 72% Certified Organic and Certified Fair Trade Vegan Chocolate with Certified Organic Peanut Butter. This is dusted with Certified Organic and Certified Vegan powered organic sugar, naturally milled.

I also made a sunflower butter and apricot reserve truffle made with 72% Certified Organic and Certified Fair Trade Vegan Chocolate with Certified Organic Sunflower Butter and Certified Organic Apricot fruit reserve. This is also dusted with Organic Powdered sugar, again, naturally milled and Certified Vegan.

Finally, I made another truffle, Organic Raspberry Reserve and 72% Certified Organic and Certified Fair Trade Vegan Chocolate dusted with a combination of Natural Cocoa Powder and Organic Powdered Sugar, Certified Vegan.

The melt-aways and the truffles contain all natural coconut fat.

Vegan Truffles


I'm going to start making vegan truffles. I'm considering using coconut fat or perhaps olive oil and maybe coconut water. Organic coconut water. Since most of the ingredients I use are organic, I figured this would be a great idea. Basically, using coconut fat would make a melt-away, something I have not done in a long time, and this makes a great center for truffles.

I'm going to make them next week. I was thinking organic peanut butter and some other great flavors, mint, for example.

Lesley Riley

Oh, what fun they had. I know, I know. It is very odd for me to post a workshop here. Rather those are always posted on Innsane. However, the reason I'm posting here is that Kim is in this workshop and she's having a ball.

Kim has taken over Innsane and has been doing a great job there and I'm sure she will post more pictures on Innsane. I just wanted to get my own up before I went on my trip.

So, now for the pictures.
