The mystery of sides
Sides being side dishes, we give too much weight to center of the plate and desserts. But a great side or a great salad or app can carry a meal.
Here is a picture of a wonderful appetizer. My tomato salad with some braised beef on top. Yum. Recipe? We don't need no stinkin' recipe. Just follow that link and braise the beef just like the short ribs.
And the second I whipped up for a woman who didn't want the Salmon. The InnSane Salmon. Can you believe that? Oh well.
This is very simple.
Pencil asparagus, prep. Dip in seasoned egg. Seasoned with sea salt, I used grey, white pepper. Then roll in rice flour. Deep fry for 2-3 minutes or until rice flour puffs slightly and is golden. Yummer. This one is so easy.
Note the other two outrageous sides. Sauteed turnips and spinach with garlic. Yup. Definitely comfort food.
By the way, that's Kim's dinner plate. (Really a salad plate.) She didn't want any salmon and since my staff scarfed all of the left over, 5, asparagus, I was glad Kim had some left.
