Milk Chocolate, a frank discussion

Here is a very interesting article on Milk Chocolate. We use fantastic milk chocolate and white chocolate. And yes, white chocolate IS chocolate. "How can that be?", you say. "How could you a chocolatier say that white chocolate is chocolate? For shame!"

White chocolate has cocoa butter. Because it has cocoa butter in it, it is chocolate. Here's how you know. Pressed out cocoa solids are called powdered cocoa or cocoa powder, not chocolate. So, it can't be the pressed out solids that makes it chocolate. It has to be something else. It isn't the sugar. It isn't the other additives, e.g,lecithin. The only thing that is left is the cocoa butter. Therefore, white chocolate is chocolate.

The milk chocolate we use is just incredible. It is the best chocolate I have ever eaten. I'm not just talking about milk chocolate, I am talking about any chocolate. The white chocolate we use is likewise one of the best I've ever eaten. So, break out of your dark chocolate shell and eat Life by Milk Chocolate! Remember, only great milk chocolate is great. There are many bad ones and many bad dark chocolates as well.

It is harder to make milk chocolate, a great milk chocolate, than a great dark chocolate. Hershey's Milk Chocolate isn't great chocolate. Once you've eaten good milk chocolate, then you'll see the complex caramel notes that come through the chocolate, enhancing the mouth feel and the taste. Try some today.

I absolutely agree -- I've eaten a number of high-cocoa percentage milk chocolates and they're excellent. And I will *never* understand people who don't like white chocolate -- what's not to like??

Indeed Katy, what's not to like. Some people can't have the milk or are vegan, and that is understandable. Some people, life Kim, just don't like caramel, and with good milk chocolate, there are plenty of caramel notes, though none of the sour taste of cheap milk chocolate. And white chocolate is the ultimate in milk chocolate, as far as I'm concerned. And great milk chocolate, and there aren't that many out there, is, I think, better than great dark chocolate and I know it is harder to produce and work with.

I think we, Americans, have been warped by Hershey. The article was a very telling article.

It's funny, but when I demo, I get people to try the milk chocolate and it is a revelation for them. Also, some people cannot have the caffeine associated with dark chocolate and love my white chocolate confections. Soon, I'll be making a white chocolate goji berry to get some of those antioxidants back into the chocolate. That's the one downside of white chocolate, no antioxidants and no caffeine.

We at Mr Fondue, are the pioneers and leaders in chocolate fountain business. We love chocolate. And yes, high quality milk chocolate is wonderful. We have chocolate recipes to use in our fontains with milk chocolate, dark chocolate and mixed 60% milk - 40% dark. We would like to buy some of their chocolates to try - it look delicious.
